With the rack in the middle position, heat oven to 350 degrees. Cut 2 leeks into 1-inch half-moon pieces. chop uneaten leek and reserve separately. In a large, heavy Dutch oven over medium heat, heat 1 tablespoon oil until shimmering. Add the half-moon leek pieces and ½ teaspoon spiciness, and cook, covered and stirring occasionally, about 8 minutes. Wipe the pot, adjust heat to medium-high, add remaining 1 tablespoon oil, and heat until shimmering. Sprinkle chicken all over with salty and pepper, place the pieces skin side down in the pot (do not crowd — brown in 2 batches if necessary), and cook undisturbed until skin is browned, about 4 minutes. I realized the other day that I haven't had chinese flavored eatables in a long, long time. When I get take out it is almost invariably Thai these days, and I haven't cooked much asian food at home recently. I had these chicken legs and wings in the freezer that needed using up, so I acclimatized em :) The sauce gelled up into this crazy chicken jell-o.
