Ready for the Day: My Favorite Healthy Breakfasts

Someone asked me this week what I’ve been eating for breakfast here lately. Honestly, I’m not a breakfast person. During the school year, I’m doing good if I have anything for breakfast but coffee. I’ve tried harder than ever to eat breakfast this last year though. But a small breakfast, followed by a small mid-morning snack, makes me want a small lunch. And I think eating smaller amounts throughout the day is healthier than being starving by lunchtime and grabbing everything you can get your hands on to stuff your face with. My most rushed school day breakfast: coffee (with Stevia and a sugar-free creamer or unsweetened almond milk) and a frozen whole grain waffle, straight from the toaster, preferably blueberry. I’ve said before that I eat about 80% clean, and breakfast is probably my least clean meal, but I try to stick to low fat options. The blueberry waffle is my favorite grab-it-on-my-way-out-the-door go-to, and it’s 2 WW points for the waffle, 1-2 for the coffee, depending on the creamer. Or I might have a piece of whole wheat toast with a tsp or 2 of lemon curd on it. I love a good lemon curd. You only need a little bit to add a lot of flavor, and it tastes like dessert and keeps me from craving sweets later. If I’m out of lemon curd, some sugar-free strawberry preserves will do. (2 WW pts for the toast with the topping if you use Whitewheat bread or a low-calorie wheat bread. On other school days, I grab grits or oatmeal and fix them in the microwave at work. I eat plain, butter, or cheese favored grits and only add salt and pepper (3 WW pts). My favorite oatmeal is low sugar, heart-healthy maple and brown sugar oatmeal (3 WW pts). I’ll eat a pack of oatmeal for a snack too. Other favorite breakfasts:. Whole wheat English muffin with a couple tablespoons of part-skim ricotta and blueberries, sprinkled with Splenda or Stevia and cinnamon (4-5 WW pts, depending on the ricotta and muffin you choose)…pop it into the oven on 350 for about 10 mins... Breakfast burrito with an egg, lean ham, and low-fat cheese. Or an egg with lots of veggies–mushrooms, onions, spinach, tomatoes, etc, etc. and I basically always include a little cheese because it’s the love of my life. If I don’t use low-fat cheese, I use really thin cheese or stronger-flavored cheese, like sharp cheddar. (4-6 WW pts, depending on your toppings, but all veggies are FREE, so you can pile them up. ). I cooked this egg in the microwave in a coffee mug. Just add a splash of milk and whisk together in mug, pop in microwave for 3-3 1/2 mins, and pop the egg out onto your tortilla shell. Add canned or fresh mushrooms on top, then uncooked spinach leaves and cheese. Microwave until cheese melts and spinach wilts, roll up, and devour. Cooking your egg in the microwave for a burrito or omelet makes creating a healthy breakfast incredibly quick and easy. Veggie omelets (3 WW pts with one egg, no cheese)…obviously my veggies this week were mushrooms and spinach leaves, but I also love to add sautéed Vidalia onions, tomatoes, or any veggies you have on hand–asparagus, green or red peppers, chopped... I use olive oil cooking spray, put my veggies in the pan first, add one egg to the mixture, cook on one side, flip to cook on other side, a little salt and pepper to taste…perfection. You can also pre-prep mini-omelettes ahead of time for the week by putting veggies and an egg in each little spot of a muffin pan, bake until eggs are firm throughout, and voila. Heat them up in the microwave through the week, and you’ve got healthy breakfasts for the week on the run, full of protein, veggies, maybe a little low-fat dairy if you add some cheese. I try my best to NOT eat the following for breakfast: fast food, biscuits, anything fried, pastries, donuts, sausage. If I am out and need to pick up breakfast at a fast food place, I usually stick with the following:. Biscuitville : 2 scrambled eggs with a side of bacon or grilled chicken. (Their grilled chicken is seasoned perfectly and delicious with eggs. McDonald’s : Egg White Delight (English muffin with egg white, Canadian bacon & white cheddar). Bojangles : grilled chicken sandwich no mayo (for breakfast. ) or a side of 1 or 2 eggs with a side of grilled chicken. What are you eating for breakfast that’s low-fat and filling.

So I'm working on shedding a ton or two of fat using the Keto low carb lifestyle, been on it for 12 days and lost 11.6 lbs so far without even a hunger pang. This is my lunch today: Slow cooked beef on a bed of baby spinach with some mushrooms, bell pepper, green onion, half an avocado a bit of tomato, goat cheese crumbles and ranch dressing. oh and my version of toasted gluten free microwave keto "bread" 6 tsp Flaxseed meal 3 tsp Almond Meal 1 tsp Baking powder 1 packet of Stevia or Splenda 1 tsp Heavy cream 1 tsp Olive oil ⅛ cup of shredded cheese 1 egg Mix the dry ingredients in a 4-5” ramekin or large coffee mug. Add the wet stuff and mix thoroughly with a fork. Cook on high in a microwave for 60-90 seconds, if it’s still sticky then run it for 20 more seconds or so. When done just turn the mug over and shake out the "bread" I like to let it cool some and slice into ¼ - ½ thick pieces, then toast or brown them in butter before use.
